found a realy good veggie book in the library which is so easy to veganise.

last night we had this which was so tasty and more-ish.

1 tbs oil
1 onion, chopped
2 garllic cloves, finely chopped
1/4 tsp paprika
750g/ 1lb 10 oz sweet potato, chopped into small peices
1-2 red chillis, finely chopped
1 ltr/4 cups stock


heat oil in saucepan and cook onion for 1 - 2 mins till soft. add garlic, chilli and paprika and cook for a further 2 mins or till aromatic. add potato and toss to coat with the spices.

pour in the stock, bring to boil and then reduce heat and simmer until veg is tender. ( i simmered mine on a very low heat for 25mins)
blend the soup up (adding extra water if you want it thinner but it is supposed to be a thick puree soup)

do not overblend or the soup may become gluey.

season to taste and serve.

we had it at lukewarm temperature, not hot, and it was perfect with naan bread.
