    Default vegan chocolate chip cookies (wheat free if desired)

    i tried several different vegan chocolate chip recipes and none of them worked that great. believe it or not, i tried the one on the back of a chocolate chip bag (dairy chocolate chips), veganized it and it worked out so wonderfully!

    1. beat 2/3 cup melted vegan butter, 2 cups lightly packed brown sugar, 2 egg substitutes, 2 tbs hot water; mix well.

    2.stir in 2 2/3 cups flour (i used brown rice flour since i cant have wheat flour), 1 tsp baking powder, 1 tsp baking soda, 1/4 tsp salt.

    3.stir in 1 package dairy free chocolate chips (i used tropical source)

    4.drop from small spoon onto greased cookie sheet, bake at 375 for 8-10 minutes. makes about 5 dozen cookies.

    That recipe sounds great!

    I thought I'd share mine with you and others...

    I'm addicted to cookies and i've been using this recipe when I dont have egg substitutes...

    1 cup vegan margarine
    1 cup brown sugar
    1/4 cup soy milk
    1 tsp vanilla

    2 1/2 cups flour
    1 tsp baking soda
    1/2 tsp salt

    1 package of dairy-free chocolate chips

    Beat margarine & sugar together until creamy.
    Stir soy milk in slowly.
    Add vanilla and mix well.

    Add flour, baking soda & salt to the wet ingredients. Mix until smooth.

    Stir in chocolate chips!

    Form into balls and space 1 inch apart.

    Bake @ 350 degrees for 10 minutes or until brown around edges.

    I know it sounds like a lot of margarine, but with the brown sugar, the cookies end up very chewy and very yummy!

    You can make peanut butter cookies using less margarine and adding peanut butter or any kind of nut butter...

    Mmmm...

    I have been using this one, you have to take them out when they still look raw because they harden up when cool. Everyone says they are great, noone knows they are vegan. The earth balance makes them i think. From http://www.compassionatecooks.com/r/cookies.htm

    INGREDIENTS:
    2-1/4 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 cup Earth Balance*, softened (although Earth Balance is the best, you may use any other non-dairy butter/margarine)
    3/4 cup granulated [white] sugar
    3/4 cup packed brown sugar
    1 teaspoon vanilla extract
    Egg Replacer for 2 eggs**
    2 cups (12-ounce package) semi-sweet chocolate chips
    1 cup chopped nuts (optional)

    *Earth Balance can be found at Whole Foods, Lakeshore Natural Foods, and other natural health food stores.

    **ENER-G Egg Replacer is a brand-name powder mixture of vegetable starches that simulates eggs in baking. It can be used in recipes calling for unbeaten eggs, egg whites beaten stiff, and egg yolks. It can be found at Whole Foods as well as natural health food stores.

    INSTRUCTIONS:
    1. Combine flour, baking soda and salt in small bowl.
    2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl.
    3. Add egg replacer one at a time, beating well after each addition; gradually beat in flour mixture.
    4. Stir in chips and nuts.
    5. Drop by rounded tablespoon onto ungreased baking sheets.
    6. Bake in preheated 375-degree oven for 8 to 10 minutes or until golden brown.
    7. Let stand for 2 minutes; remove to wire racks to cool completely.

    Foxy, at my local health food store, I found gluten free choc chip and pecan cookies! They taste just like real wheat ones!!!! I wish you could try them

    at planet organic they have a TON of gluten free stuff. gluten free cookies of all sorts. i bet they have them! but everytime i eat cookies i gain weight. last batch i made, i gained five pounds even though i didnt eat barely any! LOL im staying away from cookies!

    Hey Foxy -

    I have a question for you...(or anyone who might have an answer...)

    I decided to make chocolate chips cookies lastnight. I usually make them with organic unbleached all-purpose flour (wheat), and they always turn our wonderful!

    I bought some white rice flour last week and decided to try that instead of wheat...
    they were awful

    My question is, is brown rice flour better for baking? Or is there even a difference between brown and white rice flour?

    rice flour turns out very dry and crumbly. so usually you have to add extra fat or liquid to make up for the dryness of it. i found that this recipe worked really well for brown rice flour and they werent crumbly at all. it really depends on the recipe.

    also, people who cant eat gluten, who have to use grains like rice flour instead, make rice flour mixes, where they add things to the mix to make it bind better. like xanthan gum for instance. i have a recipe for a rice flour mix that works well in all kinds of recipes. ill find it and post it

    Thanks so much. I would love to know how to make your gluten-free mix!

    Is it easy to get xanthan gum? I'm sure I can get it at my health food store!

    Do you have a lot of gluten-free recipes?

    Maybe we could start a gluten-free/vegan recipes thread.

    I stay away from most of the gluten-free stuff in the grocery stores.

    Almost every packaged product I see labeled gluten-free is 90% of the time labeled having eggs, egg whites, egg yolks.

    Those cookies banana mentioned sound pretty tasty though

    My $0.02 is that chocolate chip cookies are the kind of thing that seem to turn out fine even when you don't bother getting the recipe right. I made some by taking a basic 3-2-1 cookie dough and adding chocolate chips I made by breaking up cooking chocolate. Even though it was a basic dough and the chips were really irregular, they were fine.

    hi terra,

    sorry its been so long to get back to you.

    xanthan gum is easy to get in health food stores

    this recipe is what my grandma gave down to my mom, to use for anything really. its a basic gluten free flour mix. my grandma had to use it all the time for my grandpa who was celiac. my mom was also celiac. here is the recipe:

    gluten free flour mix:

    6 cups white rice flour
    2 cups potato starch flour
    1 cup tapioca flour



    sift and store in large container. add 1/2 teaspoon of xanthan gum per cup of flour mix. so to this you would add 4 1/2 teaspoons of xanthan gum.

    I would like to see if I can make bread using this recipe...
    I did see xanthan gum in my health food store, I have some white rice flour.. I will just need to find potato starch flour & tapioca flour...

    I've been making tons of cupcakes, cookies & french bread for my boyfriend and family lately, I haven't had any of it. I did try a bit of the bread since it was my first time making bread.. and I had a half of a cupcake, but I broke out into a rash... so I'm pretty excited to try this mix... Thank you very much foxy!!

    im pretty sure you can make bread with this recipe. theres alot of recipes around the net floating around for gluten free bread calling for rice flour mix

    I'm glad you enjoyed them. They are super easy, don't you agree?

    FR - oat flour does make a good subsitute for wheat! unfortunatly, I am allergic to more than just wheat, including oats ... i do miss my oatmeal sometimes... But i feel 200% better now that I've figured out to take gluten out of my diet...

    How about soy? Are you allergic to that? Soy flour works, too.

    terra, i can give you my recipe for gluten free bread if youd like it.

    i dont know if itd work with the rice flour mix,but you can always try and tell me. i use a bought flour mix, but its probably cheaper if u do it yourself!
