I bought Amoy straight to wok thread noodles for the first time as they were on special offer in the co-op, there was also a blue dragon chow mein sauce on offer, I had them with a pack of co-op chinese stir fry vegetables, a tin of marigold braised tofu and some extra mange touts, broccolli and asparagus tips. Couldn't eat it all despite it being delicous. So tomorrow's dinner is taken care of now!
Will be getting those noodles regularly from now on.

Trashy snack - Don't laugh, but missing jaffa cakes I put marmalade and chocolate spread on toast. It was oddly very tasty!

350ml oat cream
350ml soy milk
boil together with garlic salt and pepper for a minute or two, then add 2 medium/large potatoes thinly sliced. (At this point I added a bunch of fresh tarrogan). simmer for 10mins.
drain potatoes but keep milk mixture, then layer in a pan, i layered potato-facon-tofutti mozarella slices. add some of the milk mixture to each layer to moisten. then top with more 'cheese and bacon' and some nutritional yeast.

No, I'm afraid not as it was something from out of my head rather than a cookbook but here's a rough idea...
A load of cooked up chickpeas.
Several onions sliced and fried up.
Garlic, Chillies, Ginger, Fenugreek, Coriander, all the usual spices for a curry.
Vegetable stock.
1/2 a large pineapple, skinned and chopped into small chunks.
Creamed coconut.
Freshly grated coconut and the milk from the coconut.
Fry up the onions with spices. Add cooked chickpeas. Add vegetable stock. Cook up until done to how you want it. Add coconut milk, grated coconut. Cook for a few minutes. Add chopped pineapple. Cook until ready. Add creamed coconut to thicken it up. Serve with cooked buckwheat and whatever green vegetables you want.
I made enough to freeze half of it for later; we had it tonight when a vegan friend came round and she adored it.

I just ate two really ripe and juicy nectarines and two bananas. I bought some fruit and veg from one of the men that sell fresh fruit and veg outside shops. I also bought some yummy tomatoes and a cucumber and some plantain. Mmm I'm going to have fried plantain later.
Last night we made gorditas, I topped them with beans, sauce, capsicum, mushrooms, avocado and shallots, so so good!

I just ate a salad, nothing fancy but it was yummy: lettuce, cherry tomatoes, sweetcorn, spring onions and cucumber with Plamil mayo mixed with paprika, sea salt and ground black pepper.

lemon garlic hummus spread on wrap with sauteed yellow squash, artichoke, bellpepper and raw alvocado carrots tomatoes and lettuce topped with some vegan creamy olive dressing and sided with some steamed kale and oven fried sweet potatoe french fries. Yum (dinner last night!)

A home made coconut & choc chip cookie.
For dinner we had bulgar bake, with roast spuds, spring greens with garlic, carrots with ginger, stuffing and yam cakes.
I made a 'Shepherds' pie this evening. It was pretty good although I got the mashed potato wrong. I made it a little to soft. Still 8 out of 10 though.
It was mashed yams with paprika and onion powder baked in the oven. BB made it up when he had mashed the yams and found they molded together nicely.
They sound delicious
